Thank you TG, the wine, cider and champagne are flowing non stop party since the 24th in the afternoon, is really amazing. Today I go to my parents house and the old man had several fine wines, gifts from the neighbours ( very respected member of the comunity my dad is) I help him to finish all those :mrgreen:

Is that a flank steak or a brisket steak? Also, what kind of sausages are the larger red color ones next to the flank steak. I haven’t seen those kind of sausages before. Just curious. Looks good! At least someone gets to have a cook out, it’s been too cold here. (Well, too cold by Texas standards!:D)

There is two type, the “matambre” wich is cut enveloping the ribs, and “vacio” wich is the flank, the cuts obviously are made in different way here. The ribs ( no ribs that day) however are cut much in the same way as in USA.
The red sausage is blood sausage, is made with pork blood, onion, ciboullete ( not sure what is the translation cuz this is a french word used in Argentina) red wine, second grade meat of the pig and species.

The sausage is popular here for breakfast either by itself or mixed with other breakfast items. I’ve never had blood sausage. I’ve not seen it in stores to buy, definitely must not be popular up here!
