I wonder why there is an empty space between the top and ‘stalk’ of the mushroom cloud? Is there any ‘official’ reason?

Yes. It’s a the bright white mushroom cloud goes through a couple of darker normal clouds, therefore creating the illusion of ‘empty space’ between the top and the stalk of the cloud.
